전남지역 새꼬막 생산량은 총 6천100톤으로, 전국 생산량의 86.1%를 차지한다. 생산 금액은 196억 원으로 전남 주요 소득 품종이며, 양식면허는 총 973건 1만 1천198ha로 중요한 양식품종이다.

새꼬막은 6~8월께 자연 산란한 유생이 2주간 부유생활을 거쳐 채묘기에 부착하는 특징이 있어 유생 출현량과 발달단계를 분석해 적정 시기에 그물 채묘연에 종자를 부착시켜 중간양성 과정(2~3개월)을 거쳐 양식한다.
